Moving to a larger loaf pan

Using tested pan internal volume of 2200 ml, tested dough load of 850 g, new pan internal volume of 2800 ml, relative fill adjustment of 100 % gives suggested dough load of 1,081.8 g and pan-volume ratio of 1.273×. Do not adopt the result permanently until the loaf clears volume, shape, crumb, and bake-through checks.

Internal volume is the useful comparison

The strongest reference is a successful product in a known pan. Scaling from that observed loading captures the formula’s expansion better than a universal fill percentage.

Internal volume must be measured consistently. Published exterior dimensions include walls, rims, taper, and corners that do not hold dough.

Proportional loading still needs a bake test

A proportional load is a starting point. Pan material, shape, dough strength, proof height, and baking profile still require a test.

Once pan loading is set, use related tools to compare pan geometry, plan another scaled dough unit and scale the underlying formula.

Transferring a tested pan load

Method basis: A successful reference load is transferred in proportion to consistently measured internal pan volume.

Pan geometry and proof

Tapered pans deserve direct volume measurement.

A lid changes the acceptable expansion envelope.

The same volume in a different shape can bake differently.

Create a pan-and-product standard

Store pan model, internal volume method, dough formula, raw load, proof endpoint, bake profile, and finished loaf observations together.

For a multi-pan batch, multiply the tested per-pan load before adding divider loss. Do not inflate every pan arbitrarily to consume a rounded batch.

If loaf crowns, sidewalls, or internal crumb change, diagnose proof and bake conditions as well as loading. A correct volume ratio cannot guarantee identical heat transfer.

When water measurement is impractical, fill with a dry material and use the same material and settling method for both pans. The absolute volume may be approximate, but the ratio can still be useful.

If several cavities are joined in one strap or tray, confirm whether edge and center cavities bake alike. The calculated load may be identical while heat exposure differs, so record cavity position during the first production test.

Bread-pan loading

Can water be used to measure pan volume?

Yes for watertight pans; weigh or measure the water and dry the pan completely afterward.

Is proof height included in the calculation?

No. Proof endpoint remains specific to dough strength, pan geometry, and product standard.

Should Pullman lids change the factor?

Often. A lidded pan constrains expansion, so establish a separate tested reference.
