Capacity and batter weight play different roles
A successful reference connects one batter formula with one pan and fill depth. Capacity scaling preserves that relationship more reliably than a generic cups-of-batter chart.
Use weight for batter because aeration and viscosity make volume transfers less repeatable. Capacity may still be measured with water or another consistent method.
Shape and material affect baking time, edge setting, doming, and center doneness even when the batter depth is similar.

They produce target batter weight of 1,800.0 g and capacity ratio of 1.500×. Confirm headroom for expansion before putting the calculated amount into production.

Area and depth still matter
A capacity ratio does not establish a new oven time.
Retain the bake outcome
Record formula, pan model, capacity method, raw batter weight, fill depth, oven profile, finished height, and any overflow or collapse.
When a target pan is shallow but wide, equal capacity may not mean equal depth or bake behavior. Compare area and expected depth before relying on capacity alone.
If a cake is split among several pans, calculate total target batter first and then divide by actual pan count. Weigh each filled pan rather than relying on ladle counts.
Use a modest test batch for an unfamiliar shape. A failed structural bake provides more useful correction data when the starting assumptions were written down.
A shaped pan with a center core, deep corners, or decorative relief may release and bake differently from a plain pan of equal capacity. Include release quality and detail definition in the test, not only whether the batter physically fit.

Can different cake formulas share one loading density?
Not safely. Foam, butter, oil, and high-ratio batters expand and set differently.
Is brimful capacity the same as usable capacity?
No, but it can be a consistent comparison if both pans are measured brimful and the tested loading is retained.
Is baking time adjusted?
No. Monitor the target cake and establish a separate bake profile.
Should parchment volume be subtracted?
Usually its displacement is negligible, but thick inserts or shaped cores should be represented in the tested capacity relationship.
