Method basis: Flour cups and grams use the selected flour-and-measuring reference in either direction.
Why flour cups vary
Flour compresses readily, which is why scooping a cup from a bag often weighs more than spooning and leveling it.
Different flours also have distinct particle size, bran content, and milling characteristics; one cup value should not be imposed on every type.
The conversion preserves the source recipe's volume assumption. It cannot determine whether that assumption produces the desired dough hydration.
Three and a half cups in grams

Direct weighing and house standards
For bread formulas, weighing flour directly makes baker's percentages and later scaling substantially easier to reproduce.
When adapting an older recipe, test the first batch before rewriting the original cup quantity as a permanent gram value.

Store the flour brand and filling method with any house conversion adopted from a successful batch.
Adopting a house flour weight
Write the flour type, brand, cup-filling method, source cups, and adopted grams on the tested formula. For doughs, also retain hydration and batch notes so a flour conversion is not blamed for changes caused by mixing or absorption.
For flour, compare at least three ordinary filled cups rather than one carefully prepared demonstration cup. Weigh the empty vessel, avoid vibration that settles flour, and report the range. Adopt a house gram value only when the method reflects everyday production.
If flour is damp, heavily settled, or handled unlike the stated reference, run a new cup-weight test. Do not alter the density merely to force a preferred dough result; measurement and formulation are separate questions.

Does converting to grams fix a recipe?
