Method basis: Chocolate and cream divide one grossed-up base according to their entered weight parts.

Texture is ingredient- and temperature-specific

Ganache ratios are normally weights. Equal cups do not reproduce equal parts because chocolate and cream have different densities.

The selected ratio does not guarantee a texture. Cocoa solids, cocoa butter, milk solids, cream fat, added glucose, butter, temperature, and intended use all matter.

Additional liquids alter the ratio

The target covers only chocolate and cream. Additional flavoring or liquid changes both total weight and emulsion behavior.

A two-to-one batch

Enter target ganache base of 1800 g, chocolate ratio parts of 2 parts, cream ratio parts of 1 part, transfer allowance of 3 %. In this case, expect chocolate to weigh of 1,237.1 g and cream to weigh of 618.6 g. Evaluate ganache after it reaches the temperature and rest time used for filling, glazing, whipping, or piping.

Once the ganache ratio is chosen, related production may allocate chocolate for another process and coordinate a cake production batch.

Texture after cooling

A fluid glaze and a firm filling need different tests.

Added water-based flavorings affect emulsion balance.

Rounding the prepared total

Warm ganache can appear thinner than its final set.

Retain the application standard

Save chocolate product, cream fat, ratio, additions, processing temperatures, usable yield, service temperature, and texture result.

For multiple uses from one batch, calculate each required texture separately rather than averaging ratios. A compromise may perform poorly as both glaze and filling.

Establish transfer loss from weighed bowl and tool residue. When warm ganache is poured cleanly, loss may differ from a cooled piping process.

If the prepared total is rounded, recalculate both ingredients from the ratio. Adding the rounding difference to cream alone changes the formulation.

An immersion blender, spatula, or food processor can create different shear, aeration, and transfer loss. Record the emulsification tool and head position, especially when a batch must remain bubble-free for glazing.

For whipped ganache, record the unwhipped base yield and the final aerated volume separately; added air changes serving volume without changing ingredient mass.

Ganache formulation

Is 2:1 always a firm ganache?

No. It is a common reference, but chocolate formulation and temperature can materially change firmness.

Can white chocolate use the same ratio?

Usually it needs its own tested ratio because composition differs.

Are liqueur and butter included in the target?

Not in this form. Add them separately and validate the emulsion and final yield.
