Why definitions diverge

Preferment percentage normally refers to flour, not the complete preferment weight. Using total levain weight as the numerator can roughly double the apparent percentage for a liquid levain.

Total formula flour includes every flour contribution across the preferment and final mix. That common denominator allows formulas with different levain hydrations to be compared.

Fermentation behavior also depends on seed inoculation, maturity, flour choice, temperature, and final dough schedule.

Two hundred grams of prefermented flour

This scenario starts from total formula flour of 1000 g, flour in preferment of 200 g, water in preferment of 200 g. The resulting figures are prefermented flour of 20.0% and preferment hydration of 100.0%. When comparing formulas, verify that both sources use the same definition before drawing conclusions from the percentages.

If a formula lists only ripe levain weight and hydration, split it into flour and water before calculating the percentage. For 100% hydration levain, half its flour-and-water weight is flour, excluding other additions.

A change in prefermented flour may require changes to final water temperature or bulk time. Treat those as process decisions rather than embedding them in the percentage calculation.

For production scaling, preserve component weights at full precision until final weighing quantities are assigned. Early rounding can materially alter tiny seed quantities.

When preferment is held back from a previous dough, its salt and other ingredients may also influence fermentation. Reconstruct those components before treating the old dough as a simple flour-and-water preferment, and label the result so it is not compared casually with a salt-free levain.

Is levain percentage the same term everywhere?

No. Some writers quote total levain weight. Verify the author’s definition before comparing formulas.

Will more prefermented flour always make dough ferment faster?

Often it increases fermentation activity, but maturity, temperature, acidity, and flour condition also matter.

Should old dough be treated the same way?

Only after its flour and water contributions are reconstructed, including any salt or other ingredients.
