Method basis: Source salt volume is converted to mass, then divided by the target salt’s grams-per-teaspoon reference.

Salt labels and crystal structure
For brines, curing, fermentation, and baking, weighing salt is preferable because concentration matters.
Iodization and trace minerals do not materially drive this volume-to-weight calculation, though flavor may still differ.
Level the spoon consistently if the source recipe remains volume-based.
Prefer grams for concentration
Record salt brand, crystal description, source spoon volume, calculated grams, and any replacement volume. For brines or fermentation, keep salt and water weights together so concentration can be verified without returning to spoon measures.
Verify a salt reference by weighing several level teaspoons with the actual spoon and product. Avoid shaking or compressing crystals. If the measured average differs materially, use grams in the production formula and retain volume only for the original recipe history.
For surface seasoning, equal mass can still distribute differently across food. Use grams to control total salt, then test application technique rather than changing weight simply because coarse crystals look sparse.
If a spoon measure is retained for home use, round the replacement volume only after reviewing its salt mass. A convenient spoon fraction is not automatically preferable when it creates a meaningful concentration change.
