Equal weight is one control point

Equal batter weight improves layer height consistency, but identical pan material, preparation, oven position, and bake endpoint still matter.

Reserve should represent known transfer loss or a deliberate sample. Subtracting a large arbitrary amount can underfill every layer.

Deposit by pan weight: tare each prepared pan or subtract its known empty weight. Visual fill lines are less dependable for aerated batter.

In this case, expect batter per layer of 800.0 g and batter assigned to layers of 2,400.0 g. If pans differ in size, calculate their individual target weights instead of forcing equal shares.

Scraping technique changes the realistic reserve.

Oven position can undo careful raw allocation.

Reconcile every deposit

Record mixed batter, reserve, pan tares, target deposit, actual filled weights, oven positions, and finished layer heights.

For high-volume depositing, sample early, middle, and late pans. Batter density may change as foam settles or inclusions redistribute.

If batter is deliberately allocated unequally for tiered or shaped layers, calculate each pan from its tested loading rather than using an average.

A leftover amount after all pans are filled should be weighed and assigned. Unexplained batter undermines both formula yield and layer consistency records.

For striped or marbled layers, total weight can still be controlled while colors or flavors are subdivided separately. Weigh each component before recombining so decorative allocation does not create unexplained differences among pans.

Prepared-pan weight can change after greasing, parchment, or reusable liners are added. Tare the pan in its ready-to-fill state so the batter target is not distorted by different preparation materials.

If layers will be leveled after baking, track trimmed weight separately. Trimming loss does not justify unequal raw deposits, but it can explain why assembled finished layers weigh less than their original batter allocation.
