All percentages share the flour basis

Every baker’s percentage uses flour as its denominator. Adding percentages before multiplying is valid because they share that basis.

The combined additions field is convenient for estimating batch weight, but a production formula should still list sugar, fat, egg, preferment, and inclusions separately.

Expected bowl residue, divider loss, and sampling do not belong inside ingredient percentages. Add an explicit production allowance after the formula is balanced.

The completed formula can move into production tools that turn the batch into pizza-ball production, audit total water, allocate the flour basis and inspect the complete baker’s-percentage formula.

Converting formula percentages to grams

total dough = flour × [1 + (water % + salt % + other additions %) ÷ 100]

Method basis: Water, salt, and combined additions are independent baker’s percentages sharing one flour basis.

A production-size dough

Suppose the kitchen records flour basis of 2500 g, water percentage of 68 %, salt percentage of 2 %, other weighed additions of 8 %; total dough weight of 4,450.0 g and water weight of 1,700.0 g follows. Reconcile the mixed dough with the formula before using its weight to diagnose divider or baking loss.

Mixer and scale limits

Aggregate additions are an estimate, not a final ingredient statement.

Tiny ingredients may require a premix or higher-resolution scale.

Preferment flour and water must not be counted twice.

Reconcile theory with the mixer

Record planned and actual component weights, mixed dough weight, bowl residue, and any ingredient deliberately held back or added during mixing.

For multiple dough varieties, calculate each formula separately before combining production totals. A single averaged enrichment percentage can hide allergen, salt, and handling differences.

If the mixer has a safe working limit, compare that limit with expected dough weight and bulk volume. Maximum motor load and useful mixing quality are not necessarily the same threshold.

Use the theoretical total as a reconciliation checkpoint. Investigate a material difference rather than adjusting a percentage simply to match an unexplained scale reading.

When liquid ingredients carry dissolved sugar, milk solids, or egg, decide whether the water percentage is based on their full weight or estimated water contribution. Use one documented convention across comparisons rather than changing definitions to match a desired hydration number.
