Dividing a five-kilogram usable batch

Using finished batch weight of 5200 g, reserved or unusable weight of 200 g, number of portions of 24 portions gives weight per portion of 208.3 g and usable batch weight of 5,000.0 g. Spot-check early and late portions against the calculated weight during service.

What belongs in the usable total

Portioning is more consistent when the numerator contains only food available for guests. A tasting cup, pan residue, or manager's reserve should not quietly reduce later plates.

Weigh the batch and the portions at the same temperature where practical. Steam loss during a long service can make the last portions lighter even if the opening calculation was sound.

Portion weight is not the whole plate

The equal-weight result is a production target, not a command to add garnish or sauce to the scale unless those items were included in the batch weight.

Weight targets can be paired with other tools when the kitchen must portion by scoop volume and pack the remaining food.

Dividing the serviceable batch

portion weight = (finished batch weight − reserved weight) ÷ number of portions

Method basis: Reserved material is removed from finished weight before the remaining food is divided equally.

Portion without losing the reserve

  1. Tare the service container or subtract it from the batch weight.
  2. Remove any known reserve from the usable total.
  3. Divide by the number of plates, bowls, or packs.
  4. Spot-check early and late portions during service.

Maintaining portion control through service

The reserve can represent quality-control tasting, deliberate overage, or food that cannot be scraped cleanly from the vessel. Record which meaning applies. A recurring unexplained reserve may signal a process problem rather than a normal planning allowance.

During service, weigh enough early portions to confirm the target and sample later portions to detect drift. Servers often compensate visually as a pan empties, so a calculated portion does not guarantee that every plate receives it.

When a dish contains large discrete pieces, equal weight may not mean an equal eating experience. First allocate the major pieces, then use weight to distribute sauce or smaller components. The calculator is strongest for food that can be divided reasonably evenly.

Keep service observations with the target

Record opening batch weight, planned reserve, target portion, and closing remainder. Those four quantities reveal whether drift came from the calculation, the reserve decision, or the way food was served.

Should the container be included?

No. Tare the scale or subtract the empty container before entering finished batch weight.

What if reserve exceeds the batch?

That input combination is not meaningful; reduce the reserve to the amount actually set aside.

Can I portion by volume?

For soup or other pourable foods, the dedicated batch-volume tool is usually more practical.
