Dressing use and purchasing are different totals

Dressing need depends on leaf weight and style, not merely bowl count. Establish the amount on the salad size that will actually be served.

Whole-bottle rounding can supply more than the calculated requirement. The purchased-volume result makes that difference visible so unopened stock is not mistaken for waste.

Self-service needs its own observation

Thick dressing clings to mixing bowls and squeeze bottles. A small allowance may be appropriate, but it should reflect equipment and workflow.

Dressing seventy-five salads

Enter salads to dress of 75 salads, dressing per salad of 28 ml, extra allowance of 5 %, bottle volume of 500 ml. In this case, expect dressing required of 2,205 ml and whole bottles to obtain of 5 bottles. Treat purchasing surplus as inventory rather than predicted consumption.

Test one representative salad

The dressing purchase can be reviewed alongside tools that plan a pasta batch using another measured accompaniment, plan another pourable accompaniment and estimate the salad itself.

Separating expected use from inventory

Purchasing surplus is the difference between whole bottles obtained and the expected working requirement. It is inventory, not predicted plate waste, provided unopened product can be stored and used later.

Leaf type, cut size, added grains or vegetables, and tossing method all change coating. Measure dressing on the assembled salad rather than transferring a portion standard from a different menu item.

For self-service dressing, separate the quantity placed on the bar from the total held in reserve. Refill records and returned bottles reveal demand more clearly than assuming every opened bottle was consumed.

Reconcile opened and unopened bottles

Separate bottles opened, bottles emptied, unopened inventory, and dressing returned from service. Purchasing surplus should remain usable stock, while opened-product handling follows the kitchen's storage procedure.

Does bottle count mean all bottles will be consumed?

No. It is a purchasing round-up; volume purchased may exceed the working requirement.

Should pre-dressed and self-serve salads use the same amount?
