Check the predicted starting volume against the safe working capacity of the available pots.
Bowls determine the finished target
This equation works backward because the serving target is a finished volume. Adding the loss percentage directly would understate the starting volume slightly.
Measure the vessel at its normal fill line rather than to the rim. Garnish displacement and safe carrying space can reduce the soup volume actually served.
Garnish can displace soup in the bowl
Evaporation depends on surface area, simmer intensity, lid position, and time. Residue and tasting may be more stable, but they still deserve local observation.
Soup production often continues into decisions to plan rice served with the soup, match soup to a ladle and pack remaining soup.

Confirm pot and bowl capacity
- Fill the service bowl to its normal level and measure that volume.
- Multiply by the number of servings for the finished target.

Volume control from pot to bowl
The pot field uses working capacity, which should leave room for stirring and safe movement. A stockpot labeled ten liters should not automatically be treated as capable of holding ten liters during an active simmer.
If several pots are required, divide ingredients according to the calculated starting volume rather than filling one pot heavily and another lightly. Different depths and surface areas can produce different evaporation and seasoning concentration.
Measure bowl volume with the usual garnish and safe carrying clearance. The liters output helps choose equipment; the milliliter total remains useful for checking ladles and individual portions.
Record pot, lid, and simmer conditions
Keep starting volume, finished volume, pot working capacity, lid position, simmer duration, and bowl fill in the batch note. Together they show whether evaporation or portioning moved the result.

Why divide by the remaining percentage?
The finished target represents the volume after loss; dividing reconstructs the earlier starting amount.
Should garnish count toward bowl volume?
If garnish displaces soup significantly, measure the normal assembled serving rather than assuming a brimful bowl.
Can I enter liters?
Yes if both per-serving and result interpretation use a consistent volume unit, though the page labels milliliters.
