Percentage allocation is not functional equivalence

The two specialty percentages share one flour basis. Their sum cannot exceed 100% without making the base portion negative.

A flour blend changes absorption, gluten potential, fermentation, flavor, and color. Preserving total flour does not preserve dough behavior.

Blend percentage does not predict absorption

Name flours precisely enough to repeat the blend. Extraction rate, milling, protein, and supplier can matter more than a broad white-or-whole label.

A thirty-percent specialty blend

Flour identity and absorption

Whole grain can change fermentation as well as absorption.

A small rye addition may be operationally significant.

Blend before sampling if the production method depends on uniform distribution.

Record flour identity

Keep total flour, each percentage and weight, flour product names, lot changes, and any resulting hydration or mixing adjustment together.

When adding a third specialty flour, calculate its weight from the same total and subtract its percentage from the base portion. Do not recalculate each addition from a shrinking remainder.

Run absorption tests at production mixing intensity. A hand-mixed sample can understate the effect of bran, damaged starch, or high-extraction flour on the full process.

If a house blend is premixed and stored, reconcile the theoretical batch with the weighed amount packed. Dust, transfer residue, and scale resolution can change the usable total.

For purchasing, translate each flour weight into full bags only after the formula blend is approved. Package rounding belongs outside the baker’s percentages; otherwise a convenient bag count can quietly change the blend placed in the mixer.

Sifting or screening a whole-grain flour can change the material that actually enters the dough. If bran is removed or returned later, identify that stream separately instead of assuming the bag label still describes the final blend.
